Riganada was a traditional way of using up very stale bread by combining it with local ingredients. Nowadays we don’t often have stale bread so we use thick slices of bread toasted. Usually served as a starter or as part of a meze, riganada also makes a delicious snack.
Ingredients: 1 loaf of bread (from the bakery) 4-5 tomatoes finely chopped olive oil oregano salt (optional) 400-500 grams feta cheese, crumbled

Method:
If you are using stale bread moistened it with water and allow to drain. If you are using fresh bread cut thick slices and toast (preferably over coals!).
Drizzle the bread with olive oil, salt and top with some tomatoes
Add some crumbled feta on the top, and sprinkle some oregano over.
